100 Day Photo Challenge: Day 32

Day 32 - A picture of what you did today.

Today I was at work like every Wednesday.  Having this new job has been so great, and I really love all the people I work with and what I do on a daily basis.  Plus the atmosphere is so great; I mean doesn't my view look pretty good?  :)  I love all the Knoll classic pieces, and I get to be surrounded by them every day!  Keeping very busy, which is good!  I hate not having things to do...  I feel like I am fitting in nicely, and getting to learn a lot every day.

Best,
Megan

100 Day Photo Challenge: Day 31

Day 31 - A picture of what you wore today.

This is what I wore yesterday actually...  It's one of my favorite outfits.  I like to wear this shirt with either navy or yellow.

Shirt:          Grey and white patterned Tank - from Target
Sweater:     Navy with ribbon trim Cardigan - from Target
Scarf:         Navy and floral Scarf - from American Eagle
Pants:         Jeans - from Target
Shoes:        Grey suede Flats - from Target

As you can tell, I love Target.  lol  They just have really great priced clothes that are cute.  I don't know about you, but I don't like spending a ton on clothes, so they are usually my one stop shop.  It's nice to get a few choice items from specialty stores, but Target is great for simple basics.

Megan

100 Day Photo Challenge: Day 30

Day 30 - A picture of someone you miss.

This is my Grandma Todd.  She died in 1999, so I was only 12 years old when she passed away.  Especially on this Mother's Day I am missing her a lot.  I wish I would have been able to get to know her a lot more, because everyone who knew her just loved her.  She was a great lady; she was a mother, a teacher, and a community leader.  I feel like a lot of the way I am is from her, and I try to live my life in a way that would be a tribute to her (as well as all the other wonderful mother's I am surrounded within my family and friends).

I know its been a while since my last post, but I've been pretty busy and exhausted this last week.  I've got a lot going on with work, and volunteering.  The next two weekends Grant and I will be in Arkansas as well, so we've got plenty to keep us busy!  But its GOOD busy!  :D  I will try and be better about posting every day though!

Best,
Megan

100 Day Photo Challenge: Day 29

Day 29 - A picture of someone that can always make you smile.

Yep, you could of guessed it...  my wonderful boyfriend can always make me smile.  :)  We make each other smile and laugh all the time.  Smiling and laughing is something that I do a lot in my life, so it is very important for me to have that in my partner.  Even when either of us are in a bad mood, we have a way of cheering each other up with a joke or a silly face.  So glad that we have our humor to keep each other laughing.  :D

Megan

100 Day Photo Challenge: Day 28

Day 28 - A picture of something you’re afraid of.

Even looking at this photo gives me the shivers.  I absolutely HATE snakes!  They are sneaky little creatures, and some of them can kill you within an hour.  Yeah, no thank you to that!  I am also scared of most spiders and bugs, or any animal that may attack me really.  lol  I guess I'm kind of a wuss, but I don't care.  I don't know who wants to be attacked anyway, so my fear is justified.  :-P

So this weekend I was in Nevada, and didn't have much free time to blog, so I took a bit of a break from writing.  I'm sure you all were crushed!  lol  Saturday was Grant's 10 year reunion from high school, so we went to that.  There wasn't a ton of people there and it wasn't all that exciting, but it was good to see a few of his friends that I know pretty well now and don't get to see very often.  We also went out to Joplin that morning to see the new Avengers movie which was pretty good!  Since it was also Cinco de Mayo we had mexican for lunch all together.  Sunday we had lunch with my parents, and watched some tv and talked for a while that afternoon, then that night we had dinner with Grant's parents.  It's so nice that they live in the same town, and I still can't get over that we have that in common (its so great!).

Well, since I am tired from the busy day at work today, I think I am going to catch up on some of my shows tonight.  Until next time...

Best,
Megan

100 Day Photo Challenge: Day 27

Day 27 - A picture of yourself and a family member.

This is my sister Lauren, and this was taken St. Patrick's Day 2011 when I went to Rolla to visit her.  :)  Although we haven't been too close some years (teenage years for sisters can be rough  lol) I love her very very much!  She is such a great young lady, and I can't believe how old we are now; she's getting close to being out of college and I'm pretty much out on my own now with a REAL job!  I hope we can be even closer when she is out of school, and hang out more often.

Well, its time to make some dinner and I need to get packed up for the weekend.  This weekend is Grant's high school reunion, so we will be down in Nevada for Friday night and Saturday.  Hopefully we can see my family Friday night!  :)  Alrighty, until next time...

Best,
Megan

100 Day Photo Challenge: Day 26

Day 26 - A picture of something that means a lot to you.

I love, love.  It is what keeps me going most of the time; just knowing that you are loved and you love people can mean so much.  I know it means a lot to me!  There are so many people that I love in my life, and am thankful for those relationships weather it be family or friends.  :)

Best,
Megan

100 Day Photo Challenge: Day 25

Day 25 - A picture of your day.

So I think most of you know where this is... downtown Kansas City, MO.  Today I was down here helping take measurements for a project at work.  We were up on the 19th floor of one of the high rise buildings down there, and there was just amazing views!  The people who get these offices with this view are very lucky!  I just love Kansas City, and looking at this photo just makes me fall in love all over again.  :)

Well it has been a long day, and I am pretty tired so I am going to get to bed early tonight.  Good night everyone!

Best,
Megan

100 Day Photo Challenge: Day 24

Day 24 - A picture of something you wish you could change.

I wish I could change the way that we live and effect this planet.  I am a huge advocate for recycling, and reusing.  It really is horrible the amount of trash and harmful chemicals we put into the ground and air.  If I was able to do something to impact my community, it would be to change the way that we produce things, use things, and get rid of things.  We need to be more conscious of the products we use, and insure that they are not damaging to the environment.  Using alternative energy is something that we all should be striving for as well, because we can't keep doing what we have been doing forever.

Best,
Megan

100 Day Photo Challenge: Day 23

Day 23 - A picture of your favorite book.

I don't read a ton, but I do like to read on occasion.  This is a book I read a few years back but have always loved since.  I don't really think I can say I have a favorite book, but if you press me to answer I would go with this: Love is a Mix Tape by Rob Sheffield.  It is a story about Rob and his wife falling in love, getting married, and all the great things (like music) they share in common.  I am a total sucker for love stories (especially real ones!) so this book along with its music influence was something that caught my eye right away.  I highly suggest it!  He also has another book out which is very good as well; Talking to Girls About Duran Duran.  This one is more about his younger years and his search for love and music.  He was an editor for Rolling Stones magazine so he does know his music!  :)

Today Grant and I did end up going to the Aquarium since it was raining and we couldn't really go to the Zoo in this weather.  It was pretty lame...  $20 a person, and it was really geared more towards kids (which there were tons of there) and it was really short.  I was expecting a lot more I guess.  O well, it was nice to get out and do something together.  :)  Now we're going to relax at home and enjoy the last bit of our weekend.  Hope you can too!  Until next time...

Best,
Megan

100 Day Photo Challenge: Day 22

Day 22 - A picture of something you wish you were better at.

I wish I was better at sketching.  I sketch a lot for my job, but I am not as good as this.  I think it is just a beautiful representation of what you are trying to design, more so than renderings from a computer.  If I had this talent I wouldn't have been so focused on my computer rendering skills.

So today Grant and I had lunch with my mom and dad which was really nice.  He hadn't seen them in a while, and it was good to see my parents and talk to them about my new job.  :)  We just finished dinner which was baked mac & cheese with broccoli and rolls.  yum! Talk about comfort food!  :)  We went to the grocery store and got a bunch of berries that were on sale, so I think I'm going to make a fruit salad with them tomorrow.  I think we might try and go to the the aquarium and Legoland tomorrow that is down in Crown Center.  I bet you can guess which one is each of our choices to go to.  lol  They have tickets you can get for both, and it saves us some money so its a pretty good deal!  If we don't go there we may go to the zoo.  Neither of us have been in quite a long time, so it will be fun, and I'm looking forward to walking around.  Hope the weather is nice like it was today.  Now I'm going to finish up this movie with Grant, so until next time...

Best,
Megan

100 Day Photo Challenge: Day 21

Day 21 - A picture of something you wish you could forget.

not my car, but looks similar to the car accident I was in when I was 16.

Gosh, all these negative ones are hard!  I am usually a very positive person, and don't like to dwell on the bad things in life.  But alas, if I must answer this one I guess I would have to say I wish that I could forget about the car accidents I have been in.  Not to say I have been in very many, but I have been the passenger in some friends cars when they got into accidents.  Maybe I am better for it now, because I am much more cautious, but sometimes I wish I wouldn't tense up so much about people around me.

Now that I made up for last night, I am going to write about day 22. :)

Best,
Megan

100 Day Photo Challenge: Day 20

Day 20 - A picture of somewhere you’d love to travel.

Didn't I already answer this one?  lol  Well I would love to travel to a ton of different places, but I think the next place has got to be Colorado Springs, Colorado!  I really need to go and visit my best friend out there, and I want to see all the great sites there are to see in that part of the States.  It's been a long time since I've been to Colorado, and I do really love the mountains and scenery out there.

So I am super tired from traveling, and gotta get up somewhat early again for work, so i'm gonna get to bed.

Megan

100 Day Photo Challenge: Day 19

Day 19 - A picture of you when you were little.

I absolutely love looking at old baby photos, and old family photos!  It just brings back so many good memories and good feelings.  I get nostalgic a lot and like to think back to those special times in my life.  This is a picture of me at my aunt's house I think...  I was a pretty darn cute baby if I do say so myself.  lol

Today was a pretty good day; I got to work on some more drawings for them and I sat in a meeting for a big client they have and got a little more familiar with some of their current projects.  Tomorrow I am going to Chicago! I am super excited to see more about the products I use at work, and meet some more new people!  :)  I have to get up suuuper early, so I need to do a few things and then get to bed early.  I'm off!

Best,
Megan

100 Day Photo Challenge: Day 18

Day 18 - A picture of your biggest insecurity.

This one is tough...  I guess I would have to say that it would be my intelligence.  I guess sometimes I feel like maybe I'm not as smart as I think I am.  I am always worried when telling new people of my job, that they don't understand what I do or believe that I'm intelligent.  I know that I am smart and I am really good at what I do, but sometimes I doubt myself; especially when I am very stressed.

So this one is pretty lame...  I wasn't looking forward to writing this one, and I felt like it is hard to take a picture of this.  O well...  Today on the other hand was pretty great!  My first day at my new job was really good, and I am excited about learning even more tomorrow.  :)  Now it's time for bed.

Best,
Megan

100 Day Photo Challenge: Day 17

Day 17 - A picture of something that has made a huge impact on your life recently.

How has a city had an impact on me recently you ask?  Well this city has given me a lot of ups and downs since I have moved back here, and it has made me grow and realize how important it is to work hard.  I have been given opportunities and have made the best of them.  Moving back to the city has also given me a lot of hope and aspirations for the future.  This photo in particular just reminds me how much I love this city and how I have always known that I wanted to live here.

I am back in Kansas City now, and just enjoying the rest of my day.  Tomorrow I start my new job, so I am excited about that.  Tonight I'm going to make my version of "white lasagna".  It's chicken, garlic, broccoli, Alfredo sauce, and lasagna noodles, with Parmesan cheese grated on top.  Grant really likes it and I haven't made it in a while.  Then we need to go do some grocery shopping for the week, and probably watch a few shows tonight.  GIRLS has started on HBO and its pretty funny and good.  Basically its about a few 20 something girls who have graduated from college and are looking for jobs and starting their grown up lives.  It's pretty good, you should check it out if you have HBO.  :)

Megan

100 Day Photo Challenge: Day 16

Day 16 - A picture of someone who inspires you.

There are a lot of people who inspire me, and in many different ways.  Something that is always on my mind though is design, and there are many people in design that inspire me.  I am going to have to go with Charles & Ray Eames.  Their designs are classic, beautiful works of art that are still appreciated today.  They were so innovative at their time, and ahead of the curve with their designs; this is exactly why they are so inspiring to me.  I hope to one day own one of their chairs.  I think today I am going to finally watch that documentary about them that has been on my Netflix Queue for a while.  Its called Eames: The Architect and The Painter and it tells the story of this husband and wife team of designers.  That's another thing that is inspiring; they were married and worked so well along side each other!  Enjoy some of these beautiful pieces of furniture from them below...
The ever famous Eames Lounge with Ottoman.  In LOVE!
Eames Chaise Lounge
Eames Shell Chair on Rocker Base.  This one I really REALLY want!  this color and everything.
Eames Bent Plywood Chair
Now that the yard work is done, I think I am going to take the rest of the day to relax and watch some movies.  I am pretty worn out from all the stuff I've been doing this weekend, plus I really don't want to get sick or be too tired by Tuesday morning.  Hope you all had a wonderful weekend!  It's time for me to watch that movie!  :)

Best,
Megan

100 Day Photo Challenge: Day 15

Day 15 - A picture of something you want to do before you die.

Although I have already been here, I was young and didn't truly appreciate all of its beauty.  I want to go to several National Parks again and several that I have yet to visit.  I want to spend more time exploring and taking photos for sure.  Traveling has been something that I have always wanted to do and share with someone.  I know that I won't be able to do a ton of it any time soon, but its definitely something I'd like to be able to enjoy throughout my life.

Today I helped my parents get all of our old tractor tires out of our barn.  I had to climb up the loft in the barn and throw 12 of them down to haul away.  While I was up there I found these awesome jars!  They were all dirty and grungy, and one even had an old mouse nest in it. I cleaned them all up, and here is what they look like now...

Also while outside with Ginger I notice that the Indian Paint Brushes (the red ones below) are out, along with some Shooting Stars (the white ones below).

Aren't they so pretty?!  I just love the prairie flowers we have out here!

Well now its time to go through some boxes of stuff that we're going to put in our garage sale this summer.  Hope you all have a great Saturday!  :)

Best,
Megan

100 Day Photo Challenge: Day 14

Day 14 - A picture of someone you could never imagine your life without.

I think we all knew this was coming again.  After everything that I've been through he has always listened to me when I break down, and is there to celebrate the great moments in my life.  :)  I love you Grant, and I don't want to imagine a time when we aren't together.  We compliment each well, and we have a lot of obscure things in common.  We keep each other entertained and we are very supportive of one another.  Best guy ever!

Today I found out some really good news!  I will be sharing very soon, and it is very very exciting for me!  Don't worry, I will spill the beans soon.  Well I am down at the farm tonight and for the weekend, so I am going to spend some more time with my family before I head to bed.  Hope everyone has a GREAT weekend!  :)

Best,
Megan

100 Day Photo Challenge: Day 13

Day 13 - A picture of your favorite band or artist.

I have a lot of music that I really like, and favorites come and go, but I always go back to my old standby: Jack White.  From the White Stripes to his now solo career I have really enjoyed his music.  One of my favorite documentaries ever is "It Might Get Loud" which features him, Jimmy Page, and U2's guitarist The Edge.  I love how his music and his voice is so raw and has so much soul in it.  I like music where you can hear the emotions that come out of the person.  Here are some songs that are some of my favorites from him...

The opening clip to the movie "It Might Get Loud".  I seriously recommend this movie if you love rock & roll and guitars.  Even more so if you have an appreciation for GREAT musicians like Jack White and Jimmy Page, oh and The Edge too but most the first two.

This one was the first song that made me fall in love with them, so to speak.

Then I found this gem on their previous album.  This is honestly my favorite song of theirs.

This is off of his new solo album (which comes out soon!) that I really love!  I hear it on the radio all the time now!  It makes me fall in love with his music all over again.

Today has been so crazy.  Lots of ups and downs...  I can't wait for the weekend and to go home and be with my family.  I need it.  Well, I am going to get some sleep, got a long day tomorrow I'm sure.  Night!

Best,
Megan

100 Day Photo Challenge: Day 12

Day 12 - A picture of something you love.

My lovely boyfriend!  I'm sure he's just thrilled that I'm writing about him again, and I don't mean to talk too much about my personal life on here, but I can't help it when we spend most of our time together.  I love him so very much!  I am so glad that we were lucky enough to find each other, and have been happy with each other ever since.  It feels a little bit like a whirlwind this past year, and since we were partially long distance it made things even harder on us, but we made it through.  Now that we see each other pretty much every day things are still going strong.  We still talk to each other every single morning, day, and night.  I'm so glad that my personal life is so much better than my professional life right now.  lol  But I do think I will be getting a real job very soon.  Grant has been really great with comforting me when I get down about those sort of things, and encouraging me to find leads about jobs and what not.  He is the best thing for me now and always.  I love him!  :)  So I think that's probably enough gushing for now, and I'm sure I've embarrassed him enough for the day so I am going to end it here.

Time to get some work done...  until next time!

Best,
Megan

100 Day Photo Challenge: Day 11

Day 11 - A picture of something you hate.

hmm...  I don't really hate many things so this is a tough one.  But as I was pinning things today, and looking on Houzz I was reminded of something I absolutely despise!  VINYL SIDING!!!  Suburban America is in love with this God awful crap.  It is absolutely not sustainable; it is like plastic bottles or stryofoam, it just won't go away.  It's unfortunate that something cheaply made and bad for our environment has become something so mainstream for the average American to put on their home.  There are so many other options for siding on your house.  To name a few: wood shingles, brick, stone, wood strip siding, cement fiber board, or even metal.  Please, please, please, if you have the urge to redo your siding don't buy vinyl!  I know it may seem like the best thing to do since it's cheap and the sales people talk it up to be durable, but it really is a terrible product for our environment.

I think it is time for bed now, so until next time...

Best,
Megan

100 Day Photo Challenge: Day 10

Day 10 - A picture of your favorite sport or favorite athlete.

I am not a huge sports fan by any means, and maybe its just because the season is just now starting and I'm more excited about going to baseball games right now that I'm choosing this over Mizzou football, but I love going to Royals games!  It's been a long time since I've been to a game; actually I think the last time was Janelle's 21st b-day celebration, which feels like forever ago since we're both almost 25 now.  We're getting old.  lol  But seriously I love going to Kauffman Stadium.  It gives me goosebumps, and brings back memories of going when I was little with my family.  It just has a certain nostalgia about it that I love, along with watching the actual game.  Baseball is a little slower paced and you can enjoy it a little more relaxed in my opinion compared to football.  Hopefully Grant and I get to go to a game or two this season.  It would be great to go with a group of people too.  I definitely want to go when my bestie is back in town.  :-P

Well I need to work on a few things for a meeting tomorrow at work, so I'm going to get to it.  Until next time...

Best,
Megan

100 Day Photo Challenge: Day 09

Day 09 - A picture of the person who has gotten you through the most.

I am very thankful to have such great people in my life.  When thinking about this question, most recently these two girls had helped me get through a lot!  Abby and Michelle were my pals in college, and we were always there for each other through each and every studio.  We would be up at Stanley till all hours of the night working away and giving each other advice on our projects and life itself.  I love these girls!  I miss them o so very much too!  I am so grateful to call them friends!  :)

Best,
Megan

100 Day Photo Challenge: Day 08

Day 08 - A picture that makes you laugh.

This is a picture of me and some random statue at the St. Louis Arch; right before we got yelled at for touching the statues.  lol  That whole trip was so fun with my best girl friends from highschool right after we graduated from Raytown South High.  We took a road trip to STL and did all the touristy things; went in the arch, went to six flags, and went to the zoo.  It was a great weekend for all of us!  No one can think about that trip and not think about this moment though.  :-P

Since I missed my post on Saturday, I'm going to go ahead and post day 9 as well here in a few...  enjoy!

Best,
Megan

100 Day Photo Challenge: Day 07

Day 07 - A picture of you and someone you'd be lost without.

On short notice, this was the only picture I could find.  I know I have some more recent
photos, but I don't have them saved on my computer or anything.
My parents!  Without them I wouldn't exist.  Without them I wouldn't be the person I am today.  Without them I wouldn't have learned the things that I know now.  I love them so very much, and am so glad to have such a good relationship with them.  They came up to Kansas City today and we had dinner tonight together. This weekend Hannah and I will be in Raytown.  We are going to a concert tomorrow night in Lawrence which we are both pumped for.  So happy the work week is over!  Now Hannah and I are going to watch a movie I think, so I'm off...

Megan

100 Day Photo Challenge: Day 06

Day 06 - A picture of a person you’d love to trade places with for a day.

Seriously I have been thinking about this all day, and I couldn't think of anything until finally I stumbled upon this lady.  I love Natalie Portman; she's easily my favorite actress.  Not only is she gorgeous, she's ridiculously smart and well educated.  She is a huge environmentalist and activist, which I love as well.    It would be nice to step into her shoes for a day to see what it would be like to be famous.

Well that one was pretty lame...  It definitely wasn't my favorite topic for the 100 day challenge.  I think tomorrow's will be MUCH better!  I'm going to try and get some extra sleep tonight since I felt bad today (had a horrible migrain most of the day, thankfully I am feeling better now besides the never ending cough).  Tomorrow is Friday!  yay!  So very glad the weekend is almost here!

Best,
Megan

100 Day Photo Challenge: Day 05

Day 05 - A picture of you and the person you've had the best memories with.

This was May or June of last year, at Les Bourgeois Winery in Rocheport, Missouri

I have had a lot of good memories with a lot of great people throughout my life.  And even though I have only known Grant for a little over a year now, I feel like I have known him a lifetime.  We have had so many great memories together over this past year and I know that we have many more memories to come!  I am constantly reminded of how lucky we are to of found each other, and how amazing of a man he is.  We love to spend time with each other and be around each other as much as possible.  In the beginning we didn't get to see each other much, so those were the days or weekends that I would treasure most.  About once a month we would see each other in either Columbia or Kansas City.  Now that we live nearly 20 minutes away from each other we are really able to spend so much more time together which we both are loving.  Going through a period of distance between us was tough, but getting through that meant that we had something there worth fighting for.  I love him so very much!

This is us right after we got home from Easter with Grant's family.  :)  We are pretty darn
cute together if I do say so myself.

If I wasn't so exhausted from the event I had tonight after work, I would write a lot more but I am tired and going to spend time with my Grant before I pass out.  Good night everyone!  Friday is almost here! :-P  Until next time...

Best,
Megan

100 Day Photo Challenge: Day 04

Day 04 - A picture of favorite missed memory.

My Grandpa Todd and the Teeter-Totter he built for me.

This picture is very special to me.  Really all pictures are special to me, but the ones with people I love and miss in them are the most dear to me.  Not only do I miss my Grandpa Todd, but I also miss my Grandpa McLain.  I miss my Grandma Todd too, and I wish that I could have gotten to know her better, because I know she was an amazing woman.  What I would give to see them all again, and be able to have good conversations with them all.  It sucks when you lose great people early on in your own life.  This picture also represents part of my childhood.  Now that it is gone, (yes mom and dad I'm not a child anymore  lol) I miss the good times I used to have playing around and the lack of responsibility.  Growing up is great, but being a kid was pretty great too.  I am blessed for all the lessons I have learned since then, and am thankful for everything that has happened in my life thus far.  I only hope that things just keep getting better and better.  I know I am going to work my butt off to make sure that that happens.  I don't know if I quite answered that question exactly, but that's what I got.

Well I am going to get to bed early tonight, since tomorrow is the big event day after work.  Hope all goes well, and I will be glad to get it over with.  The weekend couldn't come any sooner....

Best,
Megan

100 Day Photo Challenge: Day 03

Day 03 - A picture of the cast from your favorite show.

Parks & Rec everybody!  gosh I love this hilarious show!!!
Had you asked me a few years ago, I probably would have said The Office, but now that NBC's Parks & Recreation has been soooo much better I can easily say it is my favorite show.  If you have not watched it yet, or are not caught up on the current season, you are missing out!  Probably my favorite part of the show is this man right here...

Mr. Ron freakin' Swanson.  :)
And now... a video tribute to the man with the stash.  (seriously the whole cast is awesome!  but I have a special place in my heart for Ron Swanson.)

Monday, monday, monday...  glad that it's over.  Just gotta make it through the end of the week.  I've got a lot going on at work this week, so it should go by fairly quickly.  Time to get dinner started, so until next time...

100 Day Photo Challenge: Day 02

Day 02 - A picture of you and a friend you have been close with for awhile.

gosh, we were young and had some crazy ideas
for school spirit back in high school.  lol
This is Janelle (and me of course on the left)!  We have known each other since kindergarten, and have been very close since.  She is my best friend, and I love when we get to spend time together.  I remember playing on the "big toy" with her in elementary school, I remember walking home from middle school and going to her house, I remember painting our hair red for the big high school football game, and many other great times spent together.  lol  We've had so many good times and memories.  I love this girl!  Although she lives in Colorado now, and we don't see each other as much as either of us would like we keep in touch and always find time to see each other once or twice every year.  Janelle is now engaged to be married in 2014, and this past fall she asked me to be her maid of honor.  I am so thrilled!  Not only do I love event planning/going to events, I am honored to be helping my best friend on her big day!  This summer she will be in Kansas City and we are definitely going to talk about wedding planning while hanging out and catching up on other things.  I can't wait!

Hope you all had a Happy Easter!  Mine was a great day spent with Grant's family.  Good food, good company!  Since we both are pretty stuffed from the delicious Easter lunch, we're probably just going to do something light while we watch Celebrity Apprentice tonight.  Here's to a good week for us all!

Best,
Megan

Bang Bang Shrimp Deliciousness!

Hello all!  Sorry I have been really slacking lately.  Work has really been consuming me a lot more, and I have been put on several projects at this point.  Yesterday I actually was put on a a new project as the LEAD DESIGNER!  Which is kind of a big deal, and really exciting!  I am hoping that this really does mean that she is interested in hiring me as an actual designer.  We shall see...  Also I have been going from staying at Grant's place some nights, to staying at my parents house alone in Raytown some nights, to going down to Nevada some weekends.  Kind of busy/crazy right now, but I am happy to be busy.  I have been cooking most nights when I'm with Grant which he loves, and I like to do as well.  I finally made a recipe I had wanted to try for a loooong time.  I saw it on pinterest a while ago, and it looked delicious and different.

Thanks to Renee for this awesome recipe that I will be making many more times I'm sure!

Bang Bang Shrimp
The original poster's picture
Ingredients
  -  1 lb. medium sized shrimp  (I used this little bitty shrimp which was harder to fry, but was nice and bite sized)
  For the Sauce
  -  1/2 cup mayonnaise
  -  4-5 teaspoons of chili garlic sauce (we used Sriracha of course!  she also suggested it for the recipe)
  -  1 teaspoon granulated sugar
  -  1 teaspoon rice vinegar (we didn't have this and I forgot to pick it up at the store, so it didn't go in and it was fine)
  For the Egg Mixture
  -  1 egg, beaten
  -  1 cup milk (so we forgot to get milk at the store too, but I had some vanilla soy milk that I drink in the fridge so I used it.  couldn't even tell that I had used it)
  For the Breading Mixture
  -  1/2 cup all-purpose flour
  -  1/2 cup panko bread crumbs  (which we always have on hand...  so many things u can use it in)
  -  1 teaspoon salt
  -  1/2 teaspoon ground black pepper
  -  1/4 teaspoon onion powder
  -  1/4 teaspoon garlic powder
  -  1/4 teaspoon dried basil
  For Frying
                                                                                                                      -  8 - 12 cups of vegetable oil (so this time i
did pan fry them, but I really want to try
baking them next time, so they are a lot
                                                                                                                         more healthy!)

Instructions  (the real ones, not exactly what I did)
1.  Combine all ingredients for the sauce in a small bowl; cover and set aside.
2.  Combine beaten egg with milk in shallow bowl; set aside.
3.  Combine flour, panko, salt, black pepper, onion powder, garlic powder, and basil in another shallow bowl; set aside.
4.  Bread the shrimp by first coating each with the breading mixture.  Dip breaded shrimp into the egg and milk mixture, and then
back into the breading.  Arrange the coated shrimp on a plate and pop them into the fridge for at least 20 minutes.  This step will
help the breading to stick on the shrimp when they are frying.  (I guess I missed this step completely, because I just dipped them
in the egg mixture, the breading mixture, then in the pan they went.  oh well, they were good none the less!)
5.  Heat oil in deep fryer to 350 degrees.  Use amount of oil required by your fryer.  (I fried them in the skillet because we don't have
a deep fryer, nor do I ever want one)
6.  When oild is hot, fry shrimp 2-3 minutes or until golden brown.  Drain on rack or paper towels.
7.  When all shrimp has been fried, drop the shrimp into a large bowl.  Spoon about 1/4 cup of sauce over shrimp and gently coat.

Mine weren't near as pretty as those above, but they sure were delicious!  Next time I'm going to try baking them though, and have them with steamed rice and veggies.  Yum!  Well that's all for tonight.  Hope you guys get a chance to try this recipe!  Soo glad its the weekend!  I really want to try and go to the Titanic Exhibit at Union Station, but I don't think we'll go this weekend so not sure what we will be up to tomorrow.   Going to go watch some more Weeds with Grant, and get caught up with Season 6.  Until next time...

Best,
Megan

Beautiful Day on the Farm

What a beautiful Saturday!  Today we did some yard work out here on "the farm".  The grass needed to be cut, so my mom Lauren and I went out and picked up limbs to get ready for the lawn mower.  My mom and Lauren took turns mowing, while I helped my dad give Ginger a bath.  We also cleaned out her kennel for her.  After we were done, and we had some lunch, I went around took some photos of our land (well the 40 acres we live on anyway).  Not too many blooms out yet, but it still was pretty nice out.  Here are the pictures I took today....

This is the front of the house
And the back of the house

I love these old planters!
The old fountain my grandmother had put in when
the house was built
This is our BBQ pit/smoker.  sooo good
when my dad makes his amazing ribs!

This is our shed/barn on this piece of land.  Down
the road on the rest of our property are several
barns and the house my grandmother and
father grew up in.
Here's Ginger after her bath.  She's such a pretty
girl.  I love her so much!

After lunch we kind of lounged around watching HGTV, and I was on pinterest (even thought the internet is terribly slow down here!) pinning my heart away.  We're going to start a movie here in a bit, so until next time...

Best,
Megan
